Brown Sugar Glazed Salmon

Ingredients

Step 1 Atlantic Salmon (7 oz piece) 1 each
Olive oil blend 1 TBSP
Salt and pepper mix ½ tsp
Step 2 Smashed sweet potatoes (5 wt-oz) 1 serving
Spicy spinach (4 wt-oz) 1 serving
Brown sugar glaze 1 oz
Process
Step 1 Season salmon with olive oil and salt and pepper. Grill per grill recipe, making nice diamond marks on both sides. Once cooked sell immediately.
Step 2 On a warm rectangle plate place smashed sweet potatoes on the left side of the plate. Place the spicy spinach in the center of the plate next to the potatoes (leave enough room for the salmon). Top the grilled salmon with 1 oz of the brown sugar glaze and place directly on the plate (right side – see picture). Serve immediately.

Brown Sugar Glaze

Ingredients

| Onions, minced | 1 | lb |
| Ginger, minced | 2 | tsp |
Step 2 | Thyme, chopped (fresh) | 1 | TBSP |
| Soy sauce | 2 | TBSP |
| Orange juice (Tropicana) | 2 | oz |
Step 3 | Brown sugar | 1 | lb |
Process
Step 1 | In a sauce pan sweat onions and ginger in butter until onions are translucent. Do not brown |
Step 2 | Lower the heat to low; add the fresh thyme and stir until you can smell the thyme. Add the soy sauce and orange juice. |
Step 3 | Add the brown sugar and using a rubber spatula stir until the brown sugar is melted and incorporated, do not boil. Scrape into a 1/6th pan and cool to room temp. Wrap, label and store at room temp until service. For service hold in rail in front of grill. |
