Texas Wild Boar Bacon Wrapped Shrimp
U-8 shrimp peeled and deveined
1 lb. package wild boar bacon
Horseradish buttermilk dipping sauce
Half lb. fresh horseradish root
1 quart buttermilk
1 pint sour cream
2 cloves fresh garlic
1 tablespoon kosher salt
Pinch white pepper
Place horseradish root, buttermilk and garlic in blender, puree until smooth, place blended mixture into mixing bowl, add sour cream and seasoning.
Using a cutting board, take one piece of bacon and wrap around shrimp by starting at the tail and working to the largest part of the shrimp. Insert a toothpick to the end to hold the bacon in place.
Using an electric skillet at 400 degrees or a regular skillet over medium-high heat, heat up a drizzle of vegetable oil. After oil is hot, place shrimp evenly on skillet and let stand for two minutes, then flip and cook for an additional two minutes.
Remove shrimp from skillet and serve with horseradish buttermilk dipping sauce.
