Park Vine recipes

Bruschetta:

3 chopped tomatoes
1 chopped cucumber
1 chopped small purple onion
5 cloves chopped garlic
4 Tablespoons olive oil
zest and juice of one lemon
salt and pepper to taste
1/2 cup fresh parsley or basil
Chop vegetables and mix together. Saute garlic in olive oil, let cool then add to vegetable mixture. Add remaining ingredients and mix.


Grilled vegetables:

1 zucchini
1 yellow squash
1 eggplant
salt and pepper
thyme
Cut vegetables diagonally at about 1 inch thickness. Rub with olive oil and sprinkle with salt pepper and thyme. Grill or saute in pan until cooked through.


Vegan Herb Ricotta

1lb tofu
1 tsp salt
2 tsp herbs de provence
4 Tablespoons olive oil
Mash tofu with fork or hands until well blended. Mix in remaining ingredients.
