Chef Amy Super Bowl Recipes

Bean and Corn Salsa
1 can Black Bean, drained and rinsed
1 can Black eyed peas, drained and rinsed
1 can Corn with peppers, drained
1 can Chunky tomatoes with Green Chilies
1 ¼ cup fresh Pico de gallo (or ½ cup onion diced)
1 tsp. each of Garlic Salt and Black pepper
1 cup Zesty Italian dressing
zest from 1 lime
Mix all ingredients together, best to let set over night.  Serve with Tortilla Chips or Endive leaves as scoops.

Guacamole
3 ripe avocados
½ cup of fresh Pico de gallo or your favorite salsa
¼ - ½ tsp. garlic salt to taste
juice from half a lime
Mix all together and serve with Chips or Endive leaves as scoops

Healthy Taco Boats
Breast from 1 rotisserie chicken, shredded
4 tsp. taco seasoning
Toss all together
Serve in Endive leaves, top with the above salsa and guacamole Chef Amy Super Bowl Recipes
