Spicy Watermelon Rind Chutney

Ingredients

1 Large watermelon
1 ½ cups cider vinegar
1 ½ cups water
2 cups sugar
1/2 cup minced peeled ginger
3-4 tablespoons minced hot Serrano peppers with seeds
3 tablespoons minced garlic
1 teaspoon salt
½ teaspoon black peppercorns

Directions

  • Remove flesh from watermelon.
  • Using a sharp knife peel off the green skin.
  • Cut rind into ½ inch cubes.
  • Place all ingredients in a 4-quart saucepan and bring to boil.
  • Simmer 1-1/12 hours stirring occasionally.
