White Chocolate Cream Cheese Frosting

Ingredients

3 ½ ounces white chocolate
1 poundcream cheese
3 tablespoons butter, unsalted
1 tablespoon lemon juice, freshly squeezed
1 teaspoon vanilla extract
1 ½ - 2 cups confectioners sugar

Directions

  • Melt the white chocolate in the top of a double boiler over simmering water, stirring frequently. Remove the chocolate from the heat and cool slightly.
  • In the bowl of an electric mixer, using the paddle attachment, beat the cream cheese and butter until smooth and creamy.
  • Add the melted white chocolate and mix. Add lemon and vanilla, mix.
  • Slowly add the sugar and cream for 1-3 minutes.
  • Frost cake immediately.
