Maple Sugar Tart

Ingredients

Tart Dough:
9 ounces butter, cold
9 ounces powder sugar, sifted
2 wholeeggs
1 egg yolk
18 ounces flour, sifted
Pinch salt

Tart filling
1-1/2 cups maple sugar
7 tablespoons flour
to taste salt
to taste vanilla
1-1/4 cups heavy cream
1.5 ounces butter, melted

Directions

Tart Dough
  • In an upright mixer with a paddle attachment, cream together the butter and sugar until blended.
  • Add eggs, one at a time to the creamed mixture.
  • Add flour.
  • Wrap in plastic wrap, chill for 2 hours until firm.
  • Roll out onto a floured surface.
  • Line tart shell as needed.

Tart Filling

  • Preheat oven to 350 degrees.
  • Whisk all ingredients.
  • Pour into prebaked tart.
  • Bake until set in center, speckled with dark gold patches, 25 minutes.
  • Tart firms up as it cools.
