Tarragon Chicken

Ingredients

4 ea 4 oz. Boneless Chicken Breast halves. ($.93)
2ea Fresh tomatoes (med) rubbed with olive oil. ($.60)
4Tbsp Fresh tarragon (minced)(Sauce $.30)
4 Tbsp white vinegar
2 Tbsp Extra virgin olive oil
1Tbsp Kosher salt
1Tbsp Black pepper
Season to taste

Directions

  • Preheat grill to a medium-high heat.
  • Season chicken with salt and pepper to taste, grill chicken and tomatoes covered over direct heat for five minutes each side. (Chicken must reach 165 internal temperature)
  • Remove chicken (set aside and keep warm) and tomatoes from grill.
  • Peel tomatoes seed and chop into medium dice and place into a mixing bowl. Stir in tarragon, vinegar, and oil season with salt and pepper.
  • Place chicken breast on plate and spoon tomato mixture over the top and serve.
