1 (8.5-oz.) pkg. ready-to-heat whole-grain brown and wild rice
2 medium zucchini, chopped
½ medium red and/or yellow bell pepper, seeded and diced
1/3 cup chopped Meijer Pitted Ripe Olives
3 tbsp. finely chopped red onion
1/3 cup balsamic vinaigretteDirections
1. Cook rice according to package directions.
2. In a large serving bowl combine rice, zucchini, bell pepper, olives, onion and vinaigrette; mix well. Cover and refrigerate at least 1 hour. Stir before serving.
