SLICED TOMATO AND AVOCADO SALAD
4 large beefsteak tomatoes, thinly sliced
1 large avocado, pitted, peeled and thinly sliced
2 tbsp. finely chopped fresh cilantro or parsley
2 tbsp. crumbled queso fresco (optional)
1 tbsp. finely diced red onion
¼ cup light lime dressing
1. Place tomato and avocado slices on a large serving platter. Season with salt and freshly ground pepper to taste.2. Sprinkle cilantro, queso fresco (if desired) and red onion on tomatoes. Drizzle with dressing, and serve.
