2 (14½-oz.) cans French-style green beans, drained
½ cup finely chopped red bell pepper
3 tbsp. chopped fresh mint
¹⁄₃ cup extra virgin olive oil
¼ cup red wine vinegar
2 garlic cloves, thinly sliced
1 tbsp. chopped fresh oregano or 1 tsp. dried oregano
1. In medium bowl toss together beans, bell pepper and mint.
2. In small bowl whisk together olive oil, vinegar, garlic and oregano. Pour over bean mixture. Toss to coat. Cover and refrigerate at least 2 hours. Season with salt and pepper to taste.
