Yogurt Grilled Chicken Breast with a Pineapple, Strawberry, and Mango Salsa

Chicken
6 4oz chicken breast
1 cup plain yogurt
1/4 cup olive oil
1 clove garlic, minced
1 tsp. dried cilantro
1 tsp. dried basil
1 each lemon, zested
2 tsp. salt
1 tsp hot sauce

Fruit Salsa
1 cup pineapple, small dice
1 cup mango, small dice
3/4 cup strawberries, small dice
1/4 cup red onion, small dice
1 each jalapeƱo, seeded and chopped
1 tbls. fresh parsley chopped
2 tbls. fresh mint chopped
3 tbls. orange juice
1 tbls. lime juice
1/4 tsp. salt

Directions

Chicken
  • mix yogurt, olive oil, garlic,cilantro, lemon zest, salt and hot sauce together in a large bowl. Add chicken and coat well. refrigerate for 1 hour.
  • preheat grill and place chicken on grill for 4 to 5 minutes per side or until chicken is firm to the touch and 165 degrees.
Fruit salsa
  • In a medium bowl, combine all ingredients together and stir well to blend. Cover with plastic wrap and let sit for 20-30 minute before serving.
Place salsa on chicken after it is finished.
