Mojo Marinated Ribs w/ Coconut Chipotle BBQ Sauce

yield: 2 full slabs baby back ribs

2 slabs baby back ribs
1 bottle Goya Mojo Marinade, enough to just cover ribs

Sauce:
1-14oz. can coconut milk
1 small can chipotle peppers in adobo sauce, puree in blender and strain, use to taste
ΒΌ cup brown sugar, or honey
1 tbsp. garlic powder
Salt and pepper to taste

Place ribs in large roasting pan, add enough Mojo marinade to just cover ribs, cover w/foil and refrigerate, let marinate 3-4 hours or preferably overnight, place into 325 degree oven for 2 hours, remove and place on grill heated to about med., brush w/ chipotle coconut bbq sauce or your favorite bbq sauce, cook about another 35-45 min. or until meat easily pulls away from bone, reapply bbq sauce as needed but do not let sauce burn.

For sauce: puree chipotle peppers in blender, strain chipotle puree through fine mesh strainer, in small sauce pan add coconut milk, chipotle puree to taste (chipotle peppers generally are very hot), brown sugar, garlic powder and salt and pepper to taste, bring to low boil, reduce heat and let simmer until sauce like consistency is reached, check seasoning, adding more chipotle if you want it spicier, or adding more brown sugar to cut some of the heat.
