Grilled Chicken with Salsa

Marinade
lime juice 1 cup+zest from 1 lime
lemon juice 1 cup+zest from 1 lemon
orange juice 1 cup+zest from 1 orange
red onion 1 small dice
jalapeño 2 small dice
cilantro 1/2 a bunch
salt pepper to taste

Salsa
pineapple 1 each small dice
mango 2 each small dice
jalapeño 2 small dice
red pepper 1 small dice
yellow pepper 1 small dice
orange pepper 1 small dice
green pepper 1 small dice
red onion 1 small dice
cilantro 1/2 bunch
cumin 1 teaspoon
cayenne 1 teaspoon
honey1/4 cup
salt and pepper to taste

chicken breast boneless 5 each

Directions

  • Marinate the chicken for about 1/2 an hour
  • Take chicken out of the marinade and sprinkle with Jamaican seasoning. Grill till done (temp 165 degrees)
  • While the chicken is cooking combine all the ingredients for the salsa, mix and set aside
  • When chicken is done let rest for 5 to 10 minutes, then serve with salsa on top.
