2 full racks of baby back ribs
creole seasoning
wood chips
olive oil

rub ribs w/ olive oil, season generously w/ creole seasoning, using only one side of grill, heat on low to med., place favorite wood chips in smoker box or in an aluminum foil pouch (w/ holes poked in it to let smoke escape)on hottest part of grill, place ribs on side of grill that is not turned on, close lid and let smoke 4-5 hours or until very tender (the internal temp. of ribs should be around 200 degrees), be sure to check ribs once an hour to replenish wood chips and to make sure the internal temp. of grill is not exceeding 250 degrees
