Dijon-Apricot Glazed Chicken Breast

1/2 cup apricot spreadable fruit
1 tbsp. Honey Dijon mustard
1 tbsp. white vinegar
1 tbsp. finely chopped thyme or 1 tsp. dried thyme
1 tsp. minced garlic, fresh or bottled
1/4 tsp. ground white pepper
3# chicken breast, 3 pieces cut in halves

Directions

For glaze: In a small sauce pan, combine all ingredients (except chicken). Cook and stir over low heat until fruit is melted and heated through. Remove from heat.
  • Place chicken skin-side down on grill over medium heat.
  • Cover and grill for approx. 50- 60 minutes total or until chicken is no longer pink, turning half way through cooking.
  • Brush chicken with glaze during the last 15 minutes of grilling.
(Note: Reheat glaze if necessary to allow for easy brushing.)
