Chef Ray Harris
6 ea Cornish Hen
½ cup Sweet chili sauce
Salt and pepper to taste
Topping
½ oz pistachios
1 oz Jordon almonds
Mix together in food processor to a fine mix
Cooking Procedures
-Cut the hen in half
-Rub with extra virgin olive oil and salt and pepper to taste
-Grill on medium heat for about 20 min
-On the last 5 min brush with Mae Ploy Sweet Chili Sauce
-Turn grill on high the last few min to allow hen to crisp a little
-Last but not least add a light dusting with a pistachio and Jordon almonds
