Marinade:
2 flat iron steaks
1 cup coffee (unflavored)
2 tbsp. Vinegar such as cider, red wine or balsamic vinegars
2 tbsp. Olive oil
1 tbsp. sweetener such as honey, granulated sugar, brown sugar or molasses
4 cloves minced garlic
1 bunch cilantro rough chop
1 pinch salt
1 pinch cayenne

Kabobs:
2 marinated flat iron steaks, cut into 1 inch pieces
2 ea. green and red peppers, deseeded and cut into 1 inch pieces
1 large red onion, peeled and cut into 1 inch pieces
1 large pkg. button mushrooms
1 tbsp. oil
salt and pepper to taste
6-8 skewers, soak in water at least 1 hour if using wooden skewers

Directions

Marinade:

Combine all ingredients. Marinate steaks at least 5 hours (best over-night).

Kabobs:

  • Pre-heat grill to med.-high heat
  • Skewer beef and vegetables, alternating between each. Brush w/ olive oil and season to taste w/ salt and pepper or use favorite grill seasoning.
  • Place on grill and cook about 2 min. per side for med. rare
