Chipotle Bacon - Jalapeno Cheddarwurst w/ Vidalia Onion Relish and Roasted Cumin Dijon

6 cheddarwurst
2 jalapeno, seeded
6 slices bacon
1/2 t chipotle powder
6 hot dog buns

Sprinkle bacon with chipotle powder and par-cook in 325 oven for 6-8 minutes. Julienne jalapeno. Split cheddarwurst and stuff with 3-5 slivers of jalapeno. Wrap with bacon and secure with toothpick. Grill over hot coals for 6-9 minutes until done.

2 vidalia onions, small dice
2 cloves garlic, minced
1 jalapeno, seeded, small dice
1/2 red bell pepper, small dice
1/4 cup rice vinegar
1T sugar
1/4 bunch cilantro, chopped

Place all ingredients except cilantro in pan. Cook down over medium heat until soft, 15-25 minutes. Season to taste with salt & pepper. Cool. Stir in cilantro.

2T cumin seeds, toasted and ground
1/4 cup dijon mustard

Mix and let sit for 1/2 hour to blend flavors.
