Basic Pizza Dough
-1 cup warm water
-1 package active dry yeast
-2 1/2 to 3 cups all-purpose flour
-2 Tbsp olive oil
-1/2 teaspoon salt
Direction
Combine the water, yeast, and 1 1/2 cups of the flour in a large bowl. Mix well. Add the oil, salt, and remaining flour. With large wooden spoon or your hands mix the ingredients together until the dough holds its shape. You may need a bit less flour, so add the last half gradually.
Place the dough on a lightly floured surface and knead until smooth and elastic, about 5 minutes. If the dough becomes sticky, sprinkle a bit more flour over it. Transfer the dough to a lightly oiled 2-quart bowl. Cover the bowl with plastic wrap or a kitchen towel, and let the dough rest until it has doubled in size, about 1 hour.
When the dough has risen, place it on a lightly floured surface, divide it into two or more parts and roll them into balls. Cover them with a towel and let rest for 15 minutes. The dough is ready to be shaped, topped and cooked.
Pizza Sauce Ingredients
-2 tablespoons olive oil
-1 garlic clove, crushed
-1 (28-ounce) can tomato puree
-1 teaspoon dried marjoram
-1 teaspoon dried basil
-Salt and fresh ground pepper, to taste
Directions
Over medium heat, heat oil in a saucepan until hot. Add all ingredients, cover and bring to a boil. Uncover, lower heat and allow to simmer for 30 minutes
Topping
-½ cup of Smoked Gouda
-½ cup of Shredded Mild Cheddar
-1 Tbsp of Shallots
-½ cup of cubed red pepper
-¼ cup of Corn
-2 Tbsp of Black Bean
-Cilantro
-½ cup of sliced Cheddarwurst
Preheat grill for high heat , Punch down dough, and divide in half. Form each half into an oblong shape 3/8 to 1/2 inch thick.
Brush grill grate with garlic flavored olive oil. Carefully place one piece of dough on hot grill. The dough will begin to puff almost immediately. When the bottom crust has lightly browned, turn the dough over using two spatulas. Working quickly, brush oil over crust, and then brush with 2 tablespoons tomato sauce. Arrange, ½ cup of cubed red pepper ,1/4 cup of corn , and 1/4 cup black bean , ¼ cup cilantro, 1 Tbsp shallots , 1 cup of sliced cheddarwurst over crust. Sprinkle with 1/2 cup of shredded smoked gouda and ½ cup of shredded mild cheddar . Close the lid, and cook until the cheese melts. Remove from grill, and set aside to cool for a few minutes while you prepare the second pizza
