Marinade:
½ cup favorite bourbon
¼ cup teriyaki sauce
2 tbsp. Dijon mustard
¼ cup pineapple juice
¼ cup brown sugar
8-10 sprigs fresh thyme
2 cloves garlic minced
1 london broil or flank steak weighing about 2 pounds
1 ear of corn per person
Butter:
1 pd. butter, soft
¼ cup blue cheese
salt and pepper to taste
Mix together ingredients for butter, season corn w/ salt and pepper and grill on med.-high (while steak is resting) corn is done when kernels begin to blacken, about 6 min. serve w/ blue cheese butter.
In large mixing bowl combine all marinade ingredients, season steak w/ salt and pepper, then place in large baking dish and pour marinade over the top, cover and let marinate at least 3-4 hours or preferably overnight, flip steak every few hours, heat grill on med.-high, remove steak from marinade and rub w/ olive oil or spray w/ cooking spray, place on grill and cook 7-8 min. per side for med. rare, let rest 10 min., to serve slice on the bias against grain (it is important to cut against grain or the meat will be very tough)
